Whether it be a small gathering amongst friends and family, or an all out summer bash, keeping the menu simple is key. Since I started blogging almost 10 years ago (OMG), I have wanted to make ice cream sandwiches with sprinkles. They’re just so pretty. I have made ice cream sandwiches with smarties, but have never gotten around to making them with sprinkles. This is the year. And what better time than for a Canada Day party?!
It all started with these adorable maple leaf sprinkles that I found at Bulk Barn. Seriously, how cute. I went in search of regular red and white sprinkles, but when I came across these I had to have them.
These sprinkles take a regular ice cream sandwich to the next level. And so easily too. You can make a batch of 12 of these in about 10 minutes…it’s really that easy.
Festive and fun. Everyone will love them!
Make Ahead Recipe Tip!
The great thing about a dessert like this is that you can make it well ahead of time. Just assemble and freeze until you’re ready to serve. Make them a few days ahead of time, and it’s one last thing you have to do when getting ready for your celebrations. I like to freeze them in an air tight container with parchment paper lining between the sandwiches, that way they don’t stick together.

Ingredients
- 12 ice cream sandwiches (allow at least 1 sandwich per person)
- maple leaf sprinkles (found at Bulk Barn or you could use regular red and white sprinkles. I used less than 1 cup for 12 sandwiches)
- parchment paper for freezing
Instructions
- Put all the sprinkles on a plate.
- Tap the open edges of the ice cream sandwiches in the sprinkles, wiggling them to make sure all the ice cream is covered with sprinkles in the way you like.
- Place the finished sandwiches into a container in the freezer until you are ready to serve them. I placed pieces of parchment paper between the layers so the sandwiches don’t stick together.
