Turkey Pesto Sandwich

This Turkey Pesto Sandwich recipe is delicious!  A soft bun stuffed with slices of deli turkey, flavourful basil pesto, fresh tomatoes, fresh basil leaves and mozzarella. These sandwiches are perfect for lunch, picnics and parties!

If there’s a sandwich that says summer, this Turkey Pesto Sandwich is it! You just can’t go wrong with turkey stacked with summer ripened tomatoes, fresh basil and pesto. So so flavourful and delicious.

Make lunch fun again!

For years lunch was the one meal that I did not enjoy planning or making. I just don’t find it all that interesting…I much prefer breakfast and dinner.  Maybe it was all the school lunches I’ve been packing for over 15 years now! But I’m trying to change that…I’m seeing that lunch has the potential to be a really simple and delicious meal.  And we’ve even changed our meal schedule on weekends to accommodate an official lunch plan. This sort of happened for us because we have teenagers in the house. Sometimes on weekends half of us are up and at ’em early, and the other half are sleeping until noon, which presents a problem in the shifting of meal times. So I decided that Saturdays we fend for ourselves for breakfast so everyone can sleep in, and instead, we will have a full planned lunch made for the entire family.  Then Sundays are for brunch, snack then dinner.

So many lunch options, you just have to plan for them!

I’m learning that lunch need not be boring. There are many delicious lunch options, you just have to take the time to make a lunch plan (I’ve been using my meal planning printables to help with the planning and shopping).  So over the last while I’ve been busy with different sandwich and slider recipes, pasta salads and buffet style lunches. And I’m going to share them with you as I go!

Add this Turkey Pesto Sandwich to your lunch rotation!

One of our most favourite sandwiches right now are these Turkey Pesto Sandwiches. They’re made with slices of deli turkey, fresh tomatoes, homemade basil pesto, fresh basil leaves, slices of fresh mozzarella, ground pepper and a dash of balsamic vinegar.  So much flavour packed into one sandwich.

Serve them buffet style!

You can make these sandwiches ahead of time, but my favourite way of serving them is to put out all of the ingredients into a buffet-style set up on the kitchen counter, and let everyone make their own bun.  This is also a great way to serve a crowd for lunch!

Make it a meal.

In addition to these sandwiches, to make a complete lunch I like to put out a bowl of chips, maybe a pasta salad, a fruit tray and a jug of lemonade.  So good. I hope you enjoy them as much as we do!

Recipe Tips:

  • Best Buns: Soft Ciabatta buns are the best for these sandwiches, but feel free to use your favourite!
  • Cheese: Use fresh mozzarella for these sandwiches. Either buy a mozzarella ball and slice it yourself, or buy pre-sliced fresh mozzarella.
  • Pesto: The BEST pesto for this sandwich is this homemade basil pesto, but you can also use a store-bought pesto.

Turkey Pesto Sandwich

Ingredients

Scale
  • 1 bun
  • 2 slices deli turkey
  • 2 slices fresh mozzarella cheese
  • 2 slices fresh tomato
  • 1 tbsp fresh pesto
  • fresh basil leaves
  • 1 dash balsamic vinegar
  • fresh ground pepper

Instructions

  1. Slice the bun horizontally.
  2. On one side of the bun spread 1 tbsp of fresh pesto, and add a few fresh basil leaves.
  3. On the other side of the bun, sprinkle a dash of balsamic vinegar.
  4. Layer on the slices of turkey, mozzarella cheese and tomato.
  5. Season with fresh ground pepper.
  6. Enjoy!
