I love cookies, but at Christmas? They’re the absolute best. I love the ritual of baking them, of trying new recipes, and of filling my home with delicious cookie baking smells. So maybe you feel the same way too, and that’s why you’re here? Well you’re in luck, I’m sharing a delicious and easy recipe for Snowball Cookies. These are one of those cookies that seems to appear on every holiday sweet tray, Christmas just isn’t the same without them.
I think Snowballs are one of the most delicious Christmas cookies out there. On first bite you get the sweetness of the icing sugar they’re rolled in, then you get the sweet, buttery and nutty flavour of the classic Snowball cookie. So good.
And they’re so pretty too. Just look at them all gorgeous rolled up in icing sugar. Here’s a tip for you too…right before you serve them, give these Snowballs an extra dusting of sugar.
Then put them out and watch them disappear.
Snowball Cookies
These Snowball Cookies melt in your mouth! They’re sweet, buttery, nutty and so delicious. A perfect treat for your Christmas cookie tray this year!
- Yield: 3 dozen snowball cookies 1x
Ingredients
- 1 cup butter (at room temperature)
- 1 cup finely ground pecans
- 1/2 cup icing sugar (confectioner’s sugar)
- 2 tsp vanilla
- 2 1/4 cup flour
- extra icing sugar for rolling (~ 1/2 cup)
Instructions
- Preheat your oven to 325 degrees.
- Cream together the butter and icing sugar until smooth and fluffy.
- Mix in the ground pecans and vanilla.
- Mix in the flour.
- Shape the cookie dough into 1 inch balls and lay them out on a cookie sheet.
- Bake for 22-25 minutes.
- Once the balls have cooled to the touch, roll them in the icing sugar.
- Enjoy!
Notes
Recipe Tip! Right before you serve these Snowball Cookies, lightly dust them with more icing sugar.
