I love cookies, but at Christmas? They’re the absolute best. I love the ritual of baking them, of trying new recipes, and of filling my home with delicious cookie baking smells. So maybe you feel the same way too, and that’s why you’re here? Well you’re in luck, I’m sharing a delicious and easy recipe for pecan Snowball Cookies. These are one of those cookies that seems to appear on every holiday sweet tray, Christmas just isn’t the same without them.

A Classic Christmas Cookie
Snowballs are one of the most delicious Christmas cookies out there, and one of the most classic holiday cookies. On first bite you get the sweetness of the icing sugar they’re rolled in, then you get the sweet, buttery and nutty flavour of the classic Snowball cookie. No holiday season is complete without them!

Roll in powdered sugar to make them look like snowballs.
They’re so pretty too. Just look at these little snowballs all gorgeous rolled up in powdered sugar. Here’s a tip for you! Right before you serve them, give these Snowballs an extra extra dusting of sugar.

Then put them out and watch them disappear.


Snowball Cookie Recipe Tips
- SUGAR: Use icing sugar. Also called powdered sugar or confectioners’ sugar.
- STORAGE: Keep these cookies in an airtight container or freezer ziplock bag at room temperature.
- FREEZING: These cookies freeze well. Store in an airtight container or freezer bags for up to 2 months. You may need to reroll them in more powdered sugar before serving.

Snowball Cookies
Ingredients
- 1 cup butter at room temperature
- 1 cup finely ground pecans
- 1/2 cup icing sugar (confectioner's sugar or powdered sugar)
- 2 tsp vanilla extract
- 2 1/4 cup all purpose flour
- 1/2 cup extra icing sugar for rolling
Instructions
- Preheat your oven to 325 degrees F.
- Line a cookie sheet with parchment paper, set aside.
- Using a stand mixer cream together the butter and icing sugar until smooth and fluffy (I just use the paddle attachment).1 cup butter, 1/2 cup icing sugar
- Mix in the ground pecans and vanilla.1 cup finely ground pecans, 2 tsp vanilla extract
- Mix in the flour.2 1/4 cup all purpose flour
- Shape the cookie dough into 1 inch cookie balls and lay them out on the prepared baking sheet. It is a crumbly dough but don't worry, it can easily be pressed into balls.
- Bake for 22-25 minutes. The cookies should be very very lightly golden brown.
- Let cool on a wire rack.
- Once the balls have cooled to the touch, roll them in the icing sugar.1/2 cup extra icing sugar for rolling
