1/2cupicing sugar(confectioner's sugar or powdered sugar)
2tspvanilla extract
2 1/4cupall purpose flour
1/2cupextra icing sugar for rolling
Instructions
Preheat your oven to 325 degrees F.
Line a cookie sheet with parchment paper, set aside.
Using a stand mixer cream together the butter and icing sugar until smooth and fluffy (I just use the paddle attachment).1 cup butter, 1/2 cup icing sugar
Mix in the ground pecans and vanilla.1 cup finely ground pecans, 2 tsp vanilla extract
Mix in the flour.2 1/4 cup all purpose flour
Shape the cookie dough into 1 inch cookie balls and lay them out on the prepared baking sheet. It is a crumbly dough but don't worry, it can easily be pressed into balls.
Bake for 22-25 minutes. The cookies should be very very lightly golden brown.
Let cool on a wire rack.
Once the balls have cooled to the touch, roll them in the icing sugar.1/2 cup extra icing sugar for rolling
