Easy Cinnamon Apple Pancakes Recipe

About these pancakes:

These light and fluffy apple cinnamon pancakes are so soft, so flavourful and really delicious! You can serve them with a drizzle of syrup or make a small batch of caramelized cinnamon apples to top them. I’m sharing both recipes for these fluffy apple pancakes and for the apple topping, below.

The perfect fall breakfast!

Apple season is the best.There’s just something so perfect about apples in fall…especially baked into cakes, loaves, muffins and our favourite, pancakes! Made with classic fall spices like cinnamon, ginger and cloves, these Easy Cinnamon Apple Pancakes taste like apple pie for breakfast. And really, who could not love that?!

Easy Cinnamon Apple Pancakes Recipe Tips:

  • MILK: You can use 2% milk or whole milk for this recipe. Don’t use skim milk.
  • APPLE VARIETY: Use any of your favourite fresh apples. We love McIntosh apples, but Granny Smith are great too, as are gala apples, pink lady apples, and honey crisp.
  • MIXING: Don’t over mix the pancake batter! Lightly mix so you end up with fluffy pancakes!
  • LEFTOVERS: Store any leftovers in an airtight container in the fridge for up to 4 days.
  • REHEATING: Reheat any leftover pancakes in the toaster or toaster oven.
  • FREEZING: These pancakes freeze well. Store in an airtight container or ziplock bag in the freezer for up to 2 months. See my handy tip for freezing crepes that’s also useful for freezing pancakes!

Serving Suggestion:

Serve these pancakes with a fresh fruit salad, and a side of bacon or sausages. Delicious.

Ingredients

Cinnamon Apple Pancakes:

  • 2 cups all purpose flour
  • 1/4 cup brown sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp ground cloves
  • 2 large eggs
  • 2 cups milk (2% or whole milk)
  • 2 tbsp melted butter
  • 1 tsp vanilla extract
  • 2 apples (peeled, cored and grated)

Caramelized Apples:

  • 2 apples
  • 2 tbsp butter
  • 2 tbsp brown sugar
  • 1/4 cup maple syrup
  • 1/2 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • splash of bourbon (optional)

Instructions

Caramelized Apple Topping:

  1. Peel, core and chop 2 apples. The apples should be small bite-sized pieces.
  2. In a small saucepan or skillet, melt 2 tbsp butter.
  3. Add the chopped apples, brown sugar, maple syrup, cinnamon and vanilla.
  4. Sauté until the apples are soft and the sugar mixture is of a syrup consistency.

  5. At this point you can add a splash of bourbon for flavour!

Apple Pancakes:

  1. Preheat a pancake griddle (or large skillet) to low-medium heat.
  2. In a large bowl whisk the flour, brown sugar, baking powder, salt, cinnamon, ginger and cloves.
  3. In a separate bowl whisk the milk, eggs, vanilla and melted butter.
  4. Add the wet ingredients to the dry ingredients. Combine by lightly mixing together (small lumps are ok).
  5. Peel and core 2 apples. Use a box grater and grate the apples.
  6. Fold the grated apple into the pancake batter.
  7. Scoop about 1/4 cup of the batter for each pancake, onto the preheated griddle.
  8. Cook for about 2-3 minutes each side, or until you see the small bubbles popping. The tops of the pancakes should be golden brown.
  9. Serve with a drizzle of maple syrup or a cinnamon/sugar mix and the apple topping.
