Ingredients
Cinnamon Apple Pancakes:

all purpose flour

brown sugar

baking powder

large eggs

cups
milk
2% or whole milk

tbsp
melted butter

apples
peeled, cored and grated
Caramelized Apples:

maple syrup

ground cinnamon

Instructions
Caramelized Apple Topping:
Peel, core and chop 2 apples. The apples should be small bite-sized pieces.
In a small saucepan or skillet, melt 2 tbsp butter.
Add the chopped apples, brown sugar, maple syrup, cinnamon and vanilla.
Sauté until the apples are soft and the sugar mixture is of a syrup consistency.
At this point you can add a splash of bourbon for flavour!
Apple Pancakes:
Preheat a pancake griddle (or large skillet) to low-medium heat.
In a large bowl whisk the flour, brown sugar, baking powder, salt, cinnamon, ginger and cloves.
In a separate bowl whisk the milk, eggs, vanilla and melted butter.
Add the wet ingredients to the dry ingredients. Combine by lightly mixing together (small lumps are ok).
Peel and core 2 apples. Use a box grater and grate the apples.
Fold the grated apple into the pancake batter.
Scoop about 1/4 cup of the batter for each pancake, onto the preheated griddle.
Cook for about 2-3 minutes each side, or until you see the small bubbles popping. The tops of the pancakes should be golden brown.
Serve with a drizzle of maple syrup or a cinnamon/sugar mix and the apple topping.
