Let’s look at parsnips again, but in a more delicious way! This recipe is just that. It’s all about embracing the sweetness and unique flavour of parsnips by caramelizing them in butter until they’re lightly crispy and golden. The end result are creamy, crispy, sweet and buttery parsnips. So good. So so good. Even to those that thought they didn’t like parsnips after all this time…these Buttery Roasted Parsnips will change minds.

The key to this recipe:

The goal for these parsnips is to cook them low and slow. Pan roasting these over a low-ish heat makes them buttery and caramelized, and the bottoms crispy and golden. So DON’T rush them, trust me. Let them sauté.

Buttery Pan Roasted Parsnips Tips

  • PARSNIPS: Use medium sized fresh parsnips. Peel and cut into 1/2 inch slices.
  • BUTTER: You need 1/4 cup plus 2 tablespoons of salted butter for this recipe. Parsnips are quite absorbent and soak up whatever they’re cooking in, so if you find that the pan isn’t buttery while the parsnips are roasting, add more butter. And watch that the butter doesn’t burn during the cooking time.

Use about 10 fresh parsnips.

Peel first.

Ingredients
  

  • 10 parsnips (peeled and cut into 1/2 inch slices)
  • 1/4 cup butter
  • 1/4 cup water
  • 1/4 tsp salt
  • 1/8 tsp ground black pepper
  • 2 tbsp butter (yes more butter)

Instructions
 

  • Peel the parsnips then cut into 1/2 inch slices (see picture above).

  • In a large skillet over low-medium heat, melt the butter then add the sliced parsnips, spreading them out evenly over the bottom of the pan.
    1/4 cup butter
  • Pour in the water, season with salt and pepper then cover the skillet tightly with a lid. Simmer for about 20 minutes. During this time don't stir the parsnips, let them cook until the parsnips are soft and the bottoms are golden.
    1/4 cup water, 1/4 tsp salt, 1/8 tsp ground black pepper
  • After the 20 minutes cooking time, toss the parsnips (or flip over to the less golden side) and add 2 more tablespoons of butter. Sauté for about 5 more minutes.
    2 tbsp butter
  • Serve immediately.
