Cheddar Cheese Shortbread with Apple Jelly
Cheddar Cheese + Apple = delicious! This sweet and savoury Cheddar Cheese Shortbread Square with Apple Jelly is the perfect all-in-one cheddar, cookie and apple treat.

About this recipe:
This is a recipe for a cheddar shortbread square with apple or crabapple jelly in every bite. The shortbread is slightly sweet and with flavours of cheddar cheese. And because cheddar cheese pairs PERFECTLY with apple, a sweet apple jelly is layered between the cheesy shortbread! The result is a buttery, sweet apple-y square.


Recipe Tips
- CHEESE: Use a flavourful sharp cheddar cheese.
- APPLE JELLY: You can use crabapple jelly or apple jelly for this recipe. I used my Mom’s crabapple jelly to make these squares, that’s what gives them such a pretty pink colour. You can use your favourite homemade or store-bought apple or crabapple jelly for this recipe.
- STORAGE: Store in an airtight container for up to 3 days. For best results keep it in the fridge.

The ingredients. I used crabapple jelly for this particular recipe. But you can use your favourite homemade or store-bought apple jelly.

The cheddar shortbread is split into 2 parts: 1 cup is set aside for the topping, and the remainder is pressed into the baking pan to be baked for 10 minutes.

Then the apple jelly is spread over the baked bottom crust.

The remaining crust is then sprinkled over the top of the jelly and the square is baked for an additional 20-25 minutes.

Serving Suggestion:
This sweet and savoury square is delightful for dessert, or served with a little glass of wine. Or serve it at your next coffee/tea date with friends.

Cheddar Cheese Shortbread with Apple Jelly
Ingredients
- 2 cups all purpose flour
- 1/4 cup granulated sugar
- 1/4 tsp salt
- 1 tsp baking powder
- 1/2 cup butter (cold and cut into cubes)
- 2 cups cheddar cheese, grated
- 2 tbsp water
- 1 1/2 cups apple jelly (apple or crabapple)
Instructions
- Preheat your oven to 350 degrees F.
- Line an 8×8 baking pan with parchment paper, leaving an overhang on the sides so you can easily lift out the slice after baking. See images above for reference.
- Using a food processor pulse together the flour, sugar, salt, baking powder, butter and shredded cheese.2 cups all purpose flour, 1/4 cup granulated sugar, 1/4 tsp salt, 1 tsp baking powder, 1/2 cup butter, 2 cups cheddar cheese, grated
- Add the water, 1 tbsp at a time until the dough comes together.2 tbsp water
- Now split the dough: set aside 1 cup for the topping, and the remainder is for the bottom.
- Press the bottom dough into the prepared pan to form the bottom crust.
- Bake the crust for 10 minutes, being careful not to let it brown.
- While the crust is baking, warm up the apple jelly in a small saucepan (just enough so it can easily be poured out).1 1/2 cups apple jelly
- Remove the crust from the oven, then spread the warmed jelly over the base crust.
- Now crumble the remaining dough over the top of the jelly layer.
- Return the pan to oven and bake for another 20 to 25 minutes.
- Let the square cool completely then using the parchment, lift slice out of pan. Slice into squares.
