Now that the holidays are behind us, we’re back to old routines, which I love, but sometimes meal routines after the fun of the holiday season can feel tedious. Weekday breakfast preparation is the same old same old, day in and day out. Cereal, leftover pancakes, toast. Cereal, leftover pancakes, toast. And repeat. I’d like to change that for everyone. But because we are so rushed during the week (I have 2 teenagers who get out of bed at the very last minute everyday), breakfast time can’t be elaborate. I’m not making eggs and bacon, or a frittata, or anything that takes more than 5 minutes to prepare…we leave those breakfasts to the weekend when we can sit and enjoy them. During the week, it’s all about time saving. But at the same time I want the kids to go to school full from a good breakfast. And I’d like to see them eat more than just a bowl of cereal every single day. So I started to think of breakfast ideas that were quick, filling and healthy, and something they could also make themselves without much effort. And right away I started to think of fun ways to enjoy an old favourite…oatmeal.
I keep seeing all of these fancy smoothie bowls on Instagram, and while they’re not really my thing (waaaaaaay too much effort for me), they do look really beautiful and delicious. And I thought why couldn’t I apply the same type of idea to the regular bowl of oatmeal, but not quite as fancy, and a lot more practical. More just the idea that you could really dress up a healthy bowl of oatmeal with some delicious toppings and flavours. We always eat the same kind of oatmeal around here…oatmeal with raisins, cinnamon and some cream, but really, so many more things could be added to make oatmeal interesting!
So I decided to come up with 5, 5-minute oatmeal recipe ideas that you could make during the week! Simple, delicious and healthy. So every day this week I’m going to share a new recipe with you, and today’ recipe is this 5 Minute Peanut Butter and Jelly Oatmeal.
I don’t know why it had never occurred to me before to add peanut butter and jelly to oatmeal! I’ve seen this done a few times by different Instagrammers and thought I really needed to try it. And boy am I ever glad I did. I don’t think I’ve enjoyed a bowl of oatmeal more, than one with peanut butter and jelly in it. SO GOSH DANG GOOD.
This simple oatmeal bowl has a hearty base of oatmeal, with a big dollop of Greek vanilla yogurt, warm peanut butter and grape jelly drizzle and whole peanuts.
Each bite is a little bite of heaven. And what a great way to get kids to eat oatmeal…if there is peanut butter on anything, my kids are guaranteed to eat it. And I like knowing that they’re off to school with a belly full of warm oatmeal.
This is such an easy breakfast. Have it ready in 5 minutes! If you love peanut butter and jelly, then you will love this. I know it.
5 Minute Peanut Butter and Jelly Oatmeal
A healthy and quick breakfast! This 5 Minute Peanut Butter and Jelly Oatmeal is a quick, healthy and delicious breakfast! Perfect for busy weekday mornings.
- Yield: 1 1x
Ingredients
- 1/3 cup quick oats
- 2/3 cup milk
- 1/4 cup Greek vanilla yogurt
- 1 – 2 tbsp grape jelly
- 1 – 2 tbsp peanut butter
- peanuts for garnish ((optional))
Instructions
- Mix together the milk and quick oats, and cook. I cook mine in the microwave, but you can also cook them on the stove.
- Put the grape jelly in a small bowl, and the peanut butter in another. Microwave for about 20 seconds, just enough so they are melted and of liquid consistency.
Putting it all together:
- Add the 1/4 cup of Greek vanilla yogurt on to the cooked oatmeal.
- Drizzle the jelly and peanut butter over the yogurt and oatmeal.
- Sprinkle with peanuts and enjoy!
