Do you love the banana coconut combination?  There’s something so delicious about bananas and coconut together…it feels tropical somehow, which is actually quite welcome this time of year.  It may not be Hawaii, but it’ll have to do.

This 5 Minute Banana Coconut Oatmeal is the next recipe in my oatmeal breakfast series…so far I’ve shared 5 Minute Peanut Butter and Jelly Oatmeal, and 5 Minute Lemon Blueberry Oatmeal.  My goal with these recipes is to give you quick, healthy and delicious recipe ideas for our busy weekday mornings.  We shouldn’t have to sacrifice taste and nutrition because we’re busy getting out the door…it’s easier than ever to whip up something delicious for you and your family.

5 Minute Banana Coconut Oatmeal

What I love about these 5 minute recipes is that they are easy enough for my kids to make for themselves.  As long as the ingredients are available, they can assemble these oatmeals in no time at all.  I like giving my kids the opportunity to try new things, especially when it comes to having them create a meal for themselves.  Kids are capable of doing so much more than we think sometimes…  They have fun trying different healthy flavour options, and I’m happy knowing that they’ve gone off to school full and ready for the day.

 

5 Minute Banana Coconut Oatmeal

For this Banana Coconut Oatmeal, I’ve substituted coconut milk for milk, just to give it a little extra coconut flavour.  Then I topped it with coconut Greek yogurt, banana slices and shredded coconut.  So simple, and so good.

5 Minute Banana Coconut Oatmeal

Ingredients

Scale
  • 1/3 cup quick oats
  • 2/3 cup coconut milk
  • 1/4 cup Greek coconut yogurt
  • 1 banana (sliced)
  • 1 tbsp flaked coconut

Instructions

  1. Mix together the quick oats and coconut milk, and cook. I cook mine in the microwave, but you can also cook them on the stove.

Putting it all together:

  1. Add the 1/4 cup of Greek coconut yogurt on to the cooked oatmeal.
  2. Add the banana slices.
  3. Sprinkle with the shredded coconut and enjoy!

    I WOULD LIKE TO TRY THE 5 MIN BANANA-COCONUT OATMEAL, BUT WAS IN QUESTION OF HOW LONG TO COOK IT? DO I SIMPLY USE THE INFO ON THE BOX?

    1. Hi Pam! Yes just follow the instructions on the box for cooking the oatmeal. I usually make mine in the microwave and it only takes about 1 minute and 30 seconds on high. Also, I’m sorry I don’t have the nutrition information.

  2. Delicious and everyone in my household likes it. So far, I have made only the 5 minute banana coconut oatmeal and the 5 minute apple pie oatmeal. I modified the recipe by using 1/2 cup of old fashioned oats, 1 cup of milk, and plain Greek yogurt. I did not have coconut milk or coconut Greek yogurt but this sounds good as well. I have used soy milk, oat milk, and low-fat cow’s milk. I think these oatmeals would be good with any kind of milk. You could make other changes too.
