Whole Wheat Crepes…A Brunch Idea!

Mother’s Day is under a week away! If you are still looking for a fantastic Mother’s Day Brunch idea, how about crepes? Crepes are the best!
They are easier to make than you might think! And crepes are a crowd pleaser!
You can load them up with all kinds of fruit, add some yogurt, honey and a dash of cinnamon…
Heaven on Earth!

Crepes
Ingredients
Crepes
- 1 cup whole wheat flour
- 1 cup milk
- 1/2 cup warm water
- 4 eggs
- 4 tbsp butter melted
- 3 tbsp sugar
- pinch salt
Fillings
- Berries! Strawberries raspberries, blackberries, blueberries
- Bananas
- Yogurt
- Custard
- Whipping Cream
- Syrup or honey
- Nutella
- Cinnamon & Sugar
Instructions
- Combine all of the above ingredients in a blender or food processor until smooth.
- Then place the batter, covered, in the fridge for at least 30 minutes.
- When ready to cook, preheat your pan over medium heat, and coat it with a little butter.
- Stir your batter, and pour about 2-3 tbsp into the pan. Then lift the pan off the burner, tilting and rotating it so the batter forms a thin circle.
- Cook until the top is set, then flip.

Crepe Recipe Tips!
- You can make the batter the day before, making breakfast time a cinch!
- This recipe feeds about 4 people, so if you have a larger crowd you may want to double, or even triple the recipe!
- Crepes can be eaten as they come off the pan, or you can stack them in between sheets of wax paper until the batter is gone, and you are ready to eat. You can even freeze them at this point.
