Mmmm.  Salsa is great with everything isn’t it?  Nachos, tacos, grilled chicken, grilled beef…you name it.  It’s especially delicious if it is made with fresh ingredients!  It’s easy to open a jar of salsa, and there’s nothing wrong with that obviously (we eat a lot of jarred salsa), but when I take the time and make a fresh salsa I’m reminded of how much better they taste!  And really, they’re very easy to make, and most of the time I have the ingredients on hand which is nice!

I made this Fresh Tomato & Mango Salsa last weekend for my hubby’s birthday, and I served it with Mexican Style Flank Steak Tacos and the combination was amazing!  SO fresh and tasty!  I hope you make and enjoy it!

Fresh Tomato & Mango Salsa

This Fresh Tomato & Mango Salsa is fresh and delicious and goes great with so many dishes!

Ingredients

Scale
  • 6 medium sized tomatoes
  • 1 ripe mango
  • 1 pepper (yellow or orange for colour interest)
  • 2 tbsp chopped red onion
  • 1 clove garlic
  • handful chopped cilantro
  • juice from 12 limes (depending on your tastes)
  • 12 tbsp olive oil (depending on how much lime juice you use)

Instructions

  1. Combine all ingredients.
  2. Let rest for about an hour to let the flavours combine.
  3. Serve with grilled chicken, tacos, grilled steak, or nachos!

  1. Would you believe that I am half Mexican, and I don’t like salsa!!?? Maybe it’s because I loathe onions and cilantro. Everyone is always shocked when I say I don’t like it. I eat like a 2 year old, what can I say 🙂 Your looks really pretty though and I bet for salsa eaters, it’s super yummy!!!
