Seriously though. If you love a charcuterie board then you’ll love this roasted charcuterie skillet. It’s everything you love about classic charcuterie…the cheese, cured meats, olives, fruit and more, but all roasted together until the cheese is all melty and delicious! Then scoop onto crackers or bread. The best.

When to serve a charcuterie skillet:

Honestly, there’s no time like the present haha! A melty charcuterie skillet is a great appetizer option for any occasion. Make one over the fire while camping, or enjoy as an appetizer during the holiday season. My favourite though is to roast one on the barbecue in summer and enjoy on the patio with a glass of wine. Soooooo good.

Make it in the oven or on the barbecue.

The great thing about making this skillet is how versatile it is, not only with the ingredients you choose, but how you cook it. In the summer roast it on the barbecue or over a campfire while camping. Or bake it in the oven and serve it over the holidays (it’s perfect for Christmas or New Years).

Roasted Charcuterie Skillet Recipe Ideas + Tips

  • PAN: Use a cast iron or enamel pan (8, 9 or 10 inch).
  • OVEN OR BBQ: You can make this skillet in the oven or on the barbecue.
  • ASSEMBLING: To make the skillet visually appealing add little piles of the ingredients all around the pan (ingredients in groups of 3).
  • FILL UP THE PAN! Fill blanks spots…leave no spot open! The more there is, the more appetizing it looks, and the better everything melts together.

Ingredient Ideas

  • CHEESE: Most types of cheese will work (I used 3 different kinds but you can use less or more): Here are some ideas: Brie, Babybels, fresh mozzarella, cheddars, gouda
  • CURED MEATS: Use a couple different kinds: prosciutto, capicola, salami
  • OLIVES: any kind of pitted olives
  • FRUIT: sliced peaches, nectarines or apricots
  • TOMATOES: whole cherry or grape tomatoes 
  • PEPPERS: chunks of bell or sweet peppers
  • GARLIC: if love garlic, sprinkle 1 minced clove
  • NUTS: walnuts or pecans
  • HERBS: fresh rosemary sprigs
  • DRIED FRUITS: pitted dates or apricots

Serving Suggestions

  • Serve with crackers.
  • Offer bread for dipping! Yum
  • Put out small pots of honey and jam for drizzling.
  • Offer herb salts like this rosemary or basil salt for sprinkling on after.
  • Don’t forget the plates and napkins.

Ingredients
  

  • 1 tbsp olive oil
  • 6 Babybel cheese wheels
  • 6 small chunks of Brie cheese
  • 1 cup fresh mozzarella (in chunks)
  • 10 slices cured meats (prosciutto and salami)
  • 2 large fresh peaches (cut into slices)
  • 10 grape tomatoes
  • 3 medium sized sweet peppers (cut into chunks)
  • 1/2 cup olives
  • 1/4 cup pitted dates
  • 2 sprigs fresh rosemary

Instructions
 

  • Preheat the barbecue or oven to 350 degrees F.
  • Use a 10 inch skillet (an 8 or 9 would work too).
  • Drizzle about 1 tbsp olive oil over the bottom of the skillet.
  • Add the ingredients to the skillet: chunks of cheese, bundles of cured meats, whole cherry tomatoes, sliced peaches, chopped nuts, olives, sliced peppers, or what ever ingredients you choose. I like to add the individual ingredients in groups of 3 for visual appeal.
  • Lay 2 sprigs of fresh rosemary on top of all the ingredients.
  • Place the pan directly on the bbq grill or in the oven and bake for about 10 minutes, or until the cheese is all melted and bubbling. I like to use the tomatoes as an indicator of doneness…once they 'pop' or split, the skillet is probably ready.
  • Serve immediately.

Notes

These are the ingredients that I used for this particular skillet. But this dish is so versatile so feel free to add/remove anything you like, there are no wrong ingredients here!
