Welcome back to What’s For Dinner! This week I’m sharing a summer inspired dinner menu, because with this long winter we could all use a reminder that summer is in fact coming! It is coming right?! But don’t worry…if your deck is still covered in snow like ours still is, you don’t have to shovel a path to your BBQ to make this dinner…you can bake the pulled pork and corn on the cob right in your oven. Serve with homemade coleslaw and sweet pickles. So delicious. Then enjoy Lemon Shortbread Squares for dessert.
Pulled Pork Sandwiches Dinner Menu
- Main Dish: Pulled Pork Sandwiches
- Side Dish: Homemade Coleslaw
- Side Dish: Grilled Corn on the Cob with Cilantro Lime Butter
- Dessert: Lemon Shortbread Squares
This recipe for Pulled Pork Sandwiches and Coleslaw is a favourite in our house. I bake the pulled pork in the oven, and make a simple and classic coleslaw to top the sandwiches! Serve with sweet or dill pickles. Yum.
Grilled Corn on the Cob with Cilantro Lime Butter makes a perfect side dish. Corn grilled on the BBQ is the best (you can also bake these in the oven). And so easy. The butter and herbs soak into the corn as it roasts, and makes the corn so flavourful and sweet.
Make these Lemon Shortbread Squares for dessert. They’re tangy, fresh and so lemony. And a perfect dessert for this summer inspired dinner!
