Earlier this spring I made a batch of Lemon Shortbread Squares, and after I took my first bite I knew I had to make them again. The lemon was so good, so I thought different citrus curds would also be great, so this time I decided to make these squares with grapefruit curd. And yes, they are as delicious as you can imagine!
The grapefruit curd is perfect with the buttery shortbread…fresh, bright and so full of flavour. These squares turned out as good as I had hoped. Now I want to try them with oranges and limes!
Not only are these squares delicious, but they’re really easy to make too. If you have about an hour of time, you can have these out of the oven and ready to serve. In fact, the hardest thing about making these squares for me, was being left alone with them until everyone got home from work and school! The temptation is real y’all. I have a reaaaaaal hard time resisting the shortbread crust on these little bites of heaven.
I actually can’t say enough about how much I love the shortbread cookie base on this square. It’s everything I ever wanted in a shortbread…it’s tender, sweet, buttery and so perfect. It is definitely going to be my go to base for any tarts I make going forward.

Ingredients
Grapefruit Curd:
- 1/2 cup sugar
- 1 egg
- 1/4 cup melted butter
- juice from 1/2 grapefruit (about 1/4 cup)
- zest from 1/2 grapefruit
Shortbread:
- 1 1/2 cups flour
- 1/3 cup sugar
- dash of salt
- 1/2 cup plus 2 tbsp butter (at room temperature)
Instructions
Grapefruit Curd:
- Make the grapefruit curd first.
- In a saucepan whisk together the sugar and the egg until smooth.
- Stir in the melted butter, fresh grapefruit juice, and grapefruit zest, and cook on low-medium heat, whisking often.
- Whisk and cook until the grapefruit curd glaze thickens, about 15 – 20 minutes.
Shortbread Crust:
- Preheat your oven to 375 degrees.
- Line an 8-inch square baking dish with parchment paper, making sure to leave some overhang so you can pull the square easily out once it’s done baking.
- In a bowl whisk together the flour, sugar and salt.
- Add the butter, and with a pasty cutter or your hands, work the butter into the flour until it is a crumbly dough.
- Then press the dough into the baking pan.
- Put the pan into the freezer for about 10 minutes to make the dough firm.
- Then bake the dough for 15 minutes.
- Remove from the oven and spread on the grapefruit curd, making sure to leave a border about a 1/2 inch wide.
- Return the square to the oven and bake for about 20 minutes, or until the edges are golden brown.
- Let the baked square cool for at least 20 minutes, then using the parchment overhang lift it out of the pan and cut into squares.
