Welcome back to another edition of ‘Cheese of the Month’, where I showcase a delicious, award winning Canadian cheese. I’ve partnered with the Dairy Farmers of Canada to feature a different Canadian cheese each month, and last month I featured ‘Heidi’ in a Grilled Cheese with Fig Jam. This month the feature cheese is Dragon’s Breath Blue. Just from the name alone, you have to try it.
Dragon’s Breath Blue is an award winning cheese from That Dutchman’s Cheese Farm located on the shores of the Bay of Fundy in Nova Scotia. This family owned and operated artisan fromagerie, opened in 1980 by Willem and Maja Van Den Hoek, is where they craft four signature cheeses: Farmstead Gouda, Old Growler, Smeerkaas and this Dragon’s Breath Blue.
This Dragon’s Breath Blue cheese had me intrigued from the moment I opened the package. If you saw my Instagram story you had a chance to see the black wax the cheese was encased in. On a side note, every month when I receive my Canadian Cheese of the month, I will be unveiling it on an Instagram story, so make sure to follow along! And if you missed this one, you can see my video on my YouTube channel here. Anyway, this cheese comes encased in a black wax coating, and at first I didn’t really know how I should open it. So I decided to just cut the cheese case in half and see what was inside.
And this is what was inside. A soft and creamy blue cheese. What I found most interesting about this particular blue cheese is the absence of the blue veins typically seen throughout blue cheeses. I actually don’t love the blue in blue cheese, so I was really happy to see that this cheese didn’t have it. It tastes just like a creamy blue cheese, but without the blue. Think Great Stilton, Gorgonzola and Roquefort without the blue veining. This is my kind of blue cheese.
At first I didn’t really know how I was going to incorporate this cheese into a recipe, but as soon as I tasted it, I knew I wanted to serve it au naturel! The flavour of this cheese was so distinct and delicious, I wanted it to be the star of the show. So I decided to make a dessert cheese plate centred around this unique cheese. Yes a dessert plate. More often than not, we think of cheese plates as mainly being savoury, but cheese is a wonderful addition to dessert. Paired with all the right things, this dessert cheese plate is a perfect way to end a meal, or serve any time!
I wanted to serve this cheese standing on it’s own, surrounded by delicious ingredients. Sometimes the best way to really enjoy a cheese, it to serve it on its own. Let the cheese speak for itself. In this case, I just cut the cheese casing in half and used the wax casing as the dish to serve it in, and it worked perfectly.
Then I had some fun filling up the plate with all kinds of ingredients that pair wonderfully with the Dragon’s Breath Blue. Nuts, honey, berries, pear & garlic jam, chocolate, fresh pairs, oat cookies, pastries, figs…so much deliciousness all on one plate. Who can resist this? Not I.
This plate is such a fun and unique way to serve dessert! Just spread the blue cheese on fresh pear slices, or oat crackers. Pair it with little bites of dark chocolate. Or just scoop it off the serving knife right into your mouth. 😉 Just delicious.

- Tasting Notes: Delicate and slightly milky with a hint of spiciness
- Texture: Depending on it’s age, the texture ranges from creamy to buttery to crumbly. It is often bathed in a flavour rich brine which should be mixed in slightly.
