I’m noticing that I’m kind of obsessed with yellow, white, grey and black!

When we first moved to our current city, we lucked out and met some great neighbours, who became good friends for the short time they lived here.  This lemon loaf recipe came from her.  I now make it every year when my in-laws bring back a box of citrus fruit for us from Arizona.  I don’t make it at any other time of the year for some reason, but in February, it’s a nice little ray of much needed sunshine.

Servings 1 loaf

Ingredients
  

  • 1/2 cup butter
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk
  • Grated rind from 1 lemon
  • Juice from 1 lemon
  • 1/4 cup sugar

Instructions
 

  • Cream butter and sugar.
  • Add eggs, 1 at a time.
  • Combine flour, baking powder and salt.
  • Add 1/2 flour mix to butter mix.
  • Then add 1/2 milk.
  • Add rest of flour mix.
  • Add rest of milk. And add lemon gratings.
  • Line a loaf pan with wax paper.
  • Bake in a preheated 325 degree oven for 45-50 minutes, or until inserted toothpick comes out clean.
  • In the mean time, combine the lemon juice with the 1/4 cup sugar. (Or you could use your lemon sugar and add your lemon juice to it.)
  • When the cake is done baking, take it out of the oven, and pierce holes in it with a knife. Pour lemon juice/sugar mix over warm cake.
  • Let sit. This cake is even better the next day.

  1. This looks amazing and I can’t wait to make it. Your blog is so pretty and catches the eye. It makes me feel so happy inside every time I read it and look at the pictures. It inspires me to step outside my box and want to create. I just need to learn how to manage my three crazy but lovely children so that I can have more time to experiment with your ideas!!!

    It’s THAT good!!! My first one didn’t make it long after the lemon/sugar drizzle… It’s yummy warm too 😀

  6. Would this be like lemon cake?? I had some last week and just about died–very dense and moist, with a nice light glaze type iceing on top. If you ever do a recipe for that, I would love you forever!! LOL
    Looking at all your lemon stuff now. I’m addicted to all things lemon-y.

  8. Hi Jo-Anna, I don’t remember if I wished you and your family HAPPY NEW YEAR AND A VERY HEALTHY AND PROSPEROUS 2016!!

    I made your Lemon Loaf, turned out beautiful, very delicate. But, I didn’t know if after you pour the sugar lemon juice over do you leave it until the next day in the wax paper. I pulled off the wax paper when it was cooled and it took some of the crust of the loaf with it. Maybe I should have left the wax paper on it until the next day. Jan 31, 2016 6:40 pm
