Summer Peach Apricot Pie
Fresh peaches + apricots = the most delicious Peach Apricot Pie! The flavours of these summer fruits pair perfectly together.
Have you ever thought about pairing peaches and apricots together? I have to admit this recipe came out of necessity but let me tell you, it was a happy little pie accident. I had a few over ripe peaches and apricots around, but not enough to make anything with on their own with the amount I had. And I really wanted to make a peach pie…it’s my most favourite summer dessert!

So I thought, why couldn’t they be combined to make an absolutely delicious pie? They can. They really can. Peaches plus apricots makes the most delicious pie!


Peach Apricot Pie Recipe Tips
- FRUIT: Use fresh peaches and apricots. You can remove the skins or not, this is a personal preference. If the fruit is nice and soft, I usually leave them on.
- DOUGH TIP: Roll out the pie dough on a piece of parchment paper that is lightly dusted with flour. This makes it so much easier to pick up the crust to place in the pie dish. It’s great for clean-up too!
- BAKING: Make sure to follow the baking instructions. Yes, you read that high oven temperature correctly, the high heat in the initial baking will ensure that you don’t get a soggy crust. No one wants a soggy crust. 😉
- Place a baking sheet under your pie. I place a baking sheet on the rack directly under the pie in case the filling bubbles out.
- LEFTOVERS: Store any leftovers covered, on your counter for a day or two, if it lasts that long!
Baking Tip!
Often when baking, pie crust edges will darken much faster than the rest of the crust, so when I see that the edges are close to burning, it’s time to cover them. To do this I will either lay a pie crust shield over the pie, or use strips of aluminum foil to cover only the edges.

Ingredients
Pie Crust:
- 2 cups all purpose flour
- 3/4 tsp salt
- 1 tbsp heaping powdered sugar optional
- 2/3 cup shortening lard
- 1/4 cup water
Peach Apricot Pie Filling:
- 3 cups sliced fresh ripe peaches
- 1 cup sliced fresh ripe apricots
- 3/4 cup granulated sugar
- 1 tbsp cornstarch or all purpose flour
- 1 tbsp lemon juice
Instructions
Making the Pie Crust:
- Sift the flour, salt and powdered sugar into a large bowl.
- Using a pie cutter, cut in shortening until particles are pea-sized.
- Sprinkle in the water, 1 tsp at a time, mixing lightly with a fork.
- Press into a ball. Separate into 2 balls.
- Roll out each ball onto a piece of parchment paper lightly dusted with flour (one crust for the bottom, and one for the top).
Making the Peach Apricot Pie Filling:
- In a bowl combine the sliced peaches, apricots, sugar, cornstarch and lemon juice.
Baking the Pie:
- Preheat your oven to 425 degrees F.
- Place one rolled out section of crust into the pie plate. Gently press down.
- Add the peach and apricot filling.
- Place the other rolled out section of pie crust onto the top.
- Press together the edges of the crust (you can make the edges fancy if you like). Then trim off the extra dough.
- With a sharp knife, cut vents into the top crust. I usually make 4 vents.
- In your preheated 425 degree F oven, bake your pie for 25-30 minutes, keeping a watchful eye so that it doesn’t burn. Then after this time, reduce the temperature to 350 degrees F, and bake for 25-35 minutes more. Bake until the crust is golden brown and your filling is bubbling in the vents.
