This Cupid’s Cloud dessert is sweet, creamy, fluffy and bursting with raspberry freshness!  You are only 4 ingredients and 15 minutes away from this easy Valentine’s Day treat.

Perfect for a simple Valentine’s Day

I love the sentiment of Valentines Day so we do ‘celebrate’ the day, but it’s more of a family thing than a romantic thing…we don’t get too fussy over here. My husband gets a card if he’s lucky, hahaha! And I like to buy small boxes of chocolate for the kids. What I really like to do is make a nice dinner and celebrate with my family. Most years we’ll make Valentine’s Day heart shaped pizzas, and sometimes I’ll create a Candy Board, and for a real treat a Valentine’s Day Cheese Board. But one of our most favourite love day recipes, is this Cupid’s Cloud Dessert.

AKA Raspberry Fool

This Cupid’s Cloud dessert is really just a fancy Valentine’s Day name for what is known as Raspberry Fool, which is made up of 4 ingredients: frozen raspberries, whipped cream, sugar and vanilla. I just wanted to give it a creative and fun name for love day, so Cupid’s Cloud it is!

Ready in less than 15 minutes!

This dessert is so perfect for Valentine’s Day for the whole family.  It feels and looks fancy, but it isn’t!  In fact it will take you less than 15 minutes to make, and you can make it in advance so it’s ready at dessert time.  No muss, no fuss.  Just a simple and delicious dessert.

It’s all about presentation!

One of the easiest ways to make this dessert even more special is to serve it in pretty cups. Wine glasses, vintage cups or champagne coupes like the ones featured here in my photos are especially pretty! And kids LOVE this…there’s just something so fun about eating dessert out of a fancy cup!

Recipe Tips:

  • Raspberries: Use frozen raspberries only. If you use fresh raspberries they will just turn into mush and make this dessert too wet.
  • Mixing the raspberries and sugar: Use a small food processor, or even the blender, to do mix the frozen raspberries and sugar.
  • Whipping Cream: Use 33% whipping cream
  • Make Ahead: You can make this dessert ahead of time, but there are a couple of things to consider: if you make it and serve it right away, it is more fluffy. If you make it a few hours ahead, the dessert can get a bit soupy…it’s delicious but not fluffy. Just make sure to keep it in the fridge until you’re ready to serve it.
  • Option: If you don’t want to use raspberries, you can substitute them with strawberries or blackberries, or even a mix of berries.
  • More ways to enjoy Cupid’s Cloud: This raspberry and cream dessert is delicious as a stand alone dessert, but it can also be used for other things: use it to top pancakes, put it inside crepes, serve it with chocolate cake, put it on Eton Mess or Pavlova.

Cupid’s Cloud Raspberry and Cream Dessert

Ingredients
  

  • 1 cup whipping cream (heavy cream)
  • 1 tbsp granulated sugar
  • 1/2 tsp vanilla extract
  • 2 cups frozen raspberries (see recipe tips)
  • 1/2 cup granulated sugar

Instructions
 

  • Using an electric mixer whip together the whipping cream, 1 tbsp sugar, and the vanilla until stiff peaks form. Set aside.
    1 cup whipping cream, 1 tbsp granulated sugar, 1/2 tsp vanilla extract
  • In a food processor blend together the frozen raspberries and 1/2 cup sugar.
    2 cups frozen raspberries, 1/2 cup granulated sugar
  • Once the raspberries have been blended, fold them in to the whipped cream. I do this by using a spatula.
  • Evenly distribute the dessert between 4-5 dessert cups or fancy glasses.
  • Refrigerate until you are ready to enjoy! (see recipe tips)

    I didn’t even pull my food processor out to chop the raspberries, but instead used my Pampered Chef food chopper. The frozen berries were nicely chopped, but not pureed, and added a nice texture to the whipped cream. I’m also on a Keto-genic eating plan, and don’t eat sugar, so I substituted Swerve for the sugar. I’ve also used Stevia before and it is a wonderful dessert, which fits perfectly into my eating lifestyle!
