Yeeeehaaaaw! It’s Pancake season!

Is there even a pancake season?
In our city, yes.  Definitely.
It’s Stampede time here, and that means you can have free pancakes 
somewhere in our city any day of this next week!  
Pancake ovahload!!
So I thought it would be fun to feature the pancakes we love here at home!
Grab a cowboy hat, some boots and a big o’l bottle of syrup!  Let’s eat some pancakes!
To kick it off, I want to re-feature my favourite pancakes ever!  Fave!  So, so good!
Ricotta-Oat Bran Pancakes



1 cup whole wheat flour

3/4 cup oat bran
1/4 cup brown sugar
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
2 eggs
1 cup ricotta cheese
1 cup milk
1 tsp vanilla
1/4 cup canola oil
  • Mix flour, oat bran, sugar, baking powder, soda and salt.
  • Whisk eggs in a bowl.  Then add ricotta cheese, milk, vanilla and oil.
  • Combine flour mix and cheese mix.  Stir until just blended.
  • Scoop about 1/4 cup batter onto a preheated griddle.

Serve with syrup and fruit!  Yummy. Healthy.
