Is there even a pancake season?
In our city, yes. Definitely.
It’s Stampede time here, and that means you can have free pancakes
somewhere in our city any day of this next week!
So I thought it would be fun to feature the pancakes we love here at home!
Grab a cowboy hat, some boots and a big o’l bottle of syrup! Let’s eat some pancakes!
To kick it off, I want to re-feature my favourite pancakes ever! Fave! So, so good!
Ricotta-Oat Bran Pancakes
1 cup whole wheat flour
3/4 cup oat bran
1/4 cup brown sugar
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 cup ricotta cheese
1 cup milk
1 tsp vanilla
1/4 cup canola oil
- Mix flour, oat bran, sugar, baking powder, soda and salt.
- Whisk eggs in a bowl. Then add ricotta cheese, milk, vanilla and oil.
- Combine flour mix and cheese mix. Stir until just blended.
- Scoop about 1/4 cup batter onto a preheated griddle.
Serve with syrup and fruit! Yummy. Healthy.
