Cookbook Review: Rush Hour Meals

I have always loved cookbooks.  From as far back as I can remember I’ve flipped through cookbook after cookbook searching for recipes to make, and I’m still doing that 20 some years later.  Oftentimes after a long day, I like to curl up in the corner of my couch with a pile of cookbooks, making lists of recipes to try…it’s one of my most favourite ways to unwind.

Funny thing now since I’ve been blogging, things have come full circle, and as part of my job as a blogger I’m given opportunities to review cookbooks, and I have to say it’s one of my most favourite aspects of my job.  I have a major affinity for cookbooks and have amassed quite a collection over the years (swoon), so when I receive a new one to read through it feels a little bit like Christmas morning.  Now instead of me just enjoying these cookbooks on my own, I want to share my thoughts on them, with you.

So today, I have teamed up with a group of Canadian bloggers to share our reviews and some recipes from the cookbook Rush Hour Meals by Rose Reisman (you can find links at the bottom of this post to the different blogger reviews).  But first, I’m talking about what I think of this cookbook….grab some tea and have a read.

Rush Hour Meals was written by Rose Reisman, a registered nutritional consultant, who was inspired to write this cookbook for busy families.  She focusses on healthy and nutritious meals that we can all easily make at home.

Rush Hour Meals Cookbook Review

What I like most about this cookbook are all the healthy recipes.  Quick meals don’t have to mean unhealthy meals, and this cookbook is full of nutritious appetizer, snack, and dinner ideas.  There are many dishes that I would love to try, like the Loaded Nachos with Ground Turkey, Cobb Pasta Salad, Black Bean Burgers, Pizza Mac & Cheese Pie, Hoisin Salmon with Ginger Slaw, and Lemon Chicken Scaloppini.  But I also like that the book is balanced with some sweet treats like Raspberry Oatmeal Squares, Oatmeal Chocolate Chip Cookies and Chocolate Mousse Cookie Cups.

After searching through the book, I knew right away that I wanted to make this Fresh Tomato Soup with Grilled Cheese Croutons. I love homemade tomato soup, and this recipe was very good…full of fresh tomato flavour, and the grilled cheese croutons are perfect for dipping!  With all of the easy, quick and healthy recipes in this book, I plan to make many more.

Overall I think this cookbook is good, it’s full of easy and relatable recipes that are perfect for those weeknights filled with sports, lessons and all kinds of busyness!  One thing I like most about this cookbook is that Rose shares nutrition tips and some ingredient substitutions to make the dishes more kid friendly.  I would definitely recommend it if you are looking for more weeknight dinner inspiration.

  1. i love cookbooks – this one sounds perfect for me! i like to find healthy recipes, with ‘normal’ ingredients that i have, or would easily get – thanks for the review – the soup looks delicious!!

  3. I could use a new cookbook and this one sounds like it has fantastic ideas for healthy, balanced – and quick – meals. I really like the fact that the author has included some goodies with the meal recipes 🙂
