These Vietnamese Chicken Meatballs are so flavourful! Make them to add to salad rolls, lettuce wraps or summer roll salad dinner bowls. Or serve over rice.
In a large bowl mix together the ground chicken, cilantro, onions, garlic, zest, cornstarch, ginger root and soy sauce.
Prepare a baking sheet by brushing it with oil or lining it with a sheet of parchment paper.
Roll the chicken mixture into 1 inch meatballs. The mixture can be very sticky so if you can't roll it it use two spoons two drop a dollop (about 1 inch in size) onto a baking sheet.
Bake for 15-20 minutes, turning once about half way through.
