Line a baking sheet with parchment paper. Set aside.
Measure 1 cup raisins, chop them up then boil them in 1/4 cup water for 1-2 minutes. Set aside to cool, then drain.
In a separate bowl whisk together the dry ingredients: flour, baking soda, baking powder, salt and cinnamon. Set aside.1 3/4 cup all purpose flour, 3/4 tsp baking soda, 3/4 tsp baking powder, 1/2 tsp salt, 1/2 tsp ground cinnamon
Using a stand mixer cream the butter and sugars together (I just use the paddle attachment to do this).1 cup butter, 1 1/2 cups brown sugar, 1/4 cup granulated sugar
Add the eggs one at a time. Combine until creamy and smooth. Then add the vanilla.2 large eggs, 2 1/2 tsp vanilla extract
Add the flour mixture to the butter mixture. Combine.
Stir in the oats.3 1/2 cups old-fashioned rolled oats
Add the cooled chopped raisins (make sure excess water is drained off first).
Place about 12 cookies on each prepared baking sheet. Bake for 6-9 minutes. The less time baking, the softer the cookie.
