Using a stand mixer cream together the butter and sugars until smooth (I just use the paddle attachment).
Beat in the eggs, one at a time.
Then mix in the vanilla.
In a small bowl dissolve the baking soda in the hot water, then add it to the butter/sugar mixture, and combine.
In a separate bowl whisk together the salt and flour.
Then add the flour mixture to the butter mixture.
Use a rubber spatula to fold in the chocolate chips.
Drop the chocolate chip cookie dough by large spoonfuls onto your baking sheet, making sure not to crowd the pan (you should be able to easily fit 12 cookies). You can use a cookie scoop or spoon.
Bake for 10 - 12 minutes. The edges of the cookies should be light brown. And the longer you bake them, the less chewy they will be.
