Instructions
Preheat your oven to 400 degrees F.
Chop the vegetables then toss them in olive oil, oregano, salt and pepper. Place them on a baking sheet, spreading them out evenly, then roast them in the oven for 25-30 minutes, or until the veggies are cooked through. Stir them a few times during the roasting.1 medium zucchini, 1 large onion, 5 medium tomatoes, 5 cloves garlic, 2 bell peppers, 2 tbsp olive oil, 1 tsp oregano, 1/4 tsp salt, 1/8 tsp ground black pepper
In a large pot cook the soba noodles according to the package directions (the noodles should be al dente). Drain.1 - 363 g package of soba noodles
