To a slow cooker add the chopped apples, sugars, spices and vanilla. Mix well.6 medium/large apples, 1/2 cup granulated sugar, 1/2 cup brown sugar, 2 tsp cinnamon, 1/8 tsp ground nutmeg, 1/8 tsp allspice, 1/8 tsp salt, 1 tsp vanilla extract
Cook in the slow cooker on LOW for 8 to 10 hours (see tips above), stirring occasionally if you can. Let the mixture cook until it is thick and dark brown.
After the cooking time is done, remove the lid and blend the apple mixture with an immersion blender until smooth.
Store in sterile jars in your fridge for up to 2 weeks.
