Wash and dry the head of cauliflower. Then cut it up in to bite sized pieces.
In a large bowl toss the cauliflower with the oil and salt and pepper.
Line a baking sheet with parchment paper, then spread the cauliflower out evenly over it.
Bake for about 25 minutes, stirring frequently. You have to watch them closely so they don't burn, and you may have to turn them. The cauliflower should be tender when done.
Serve immediately.
Notes
A head of cauliflower may seem like a lot, but it shrinks down after it's cooked. Trust me, you'll want more!
