Ricotta Oat Bran Pancakes

Ingredients

flour

oat bran
1/4
cup
brown sugar

tsp
baking powder
1
tsp
baking soda
1/4
tsp
salt

eggs

cup
ricotta cheese
1
cup
milk
1
tsp
vanilla
1/4
cup
canola or vegetable oil
Instructions
Whisk together the flour, oat bran, sugar, baking powder, soda and salt.
In a separate bowl whisk the eggs, ricotta cheese, milk, vanilla and oil until smooth.
Add the dry ingredients to the wet ingredients, and stir until just blended.
Scoop about 1/4 cup batter per pancake, onto a low-medium heat preheated griddle.
Cook each pancake about 2-3 minutes on one side, until you see the bubbles popping, then flip.
