This Broccoli Potato Soup is made with simple ingredients you probably have in your pantry already! It's so easy to make, and is ready in less than 1 hour.
5medium/large potatoespeeled and cut into 1/2 inch chunks
5cupssmall broccoli florets
1 1/2cupsgrated cheddar cheese
Instructions
In a large pot on low/medium heat, add about 2 tablespoons of olive oil. Then add the onion and garlic and sauté until the onions are soft, about 5 minutes.
Then stir in the flour, salt, pepper and dry mustard, and cook for about 1 minute (continuously stirring).
Add the water and simmer until the the mixture thickens, about 2 minutes.
Then whisk in the chicken broth and milk and let simmer for 5 minutes, while continuously whisking. If you have problems getting a creamy texture, you can use an immersion blender to bring it all together.
Then add the potatoes and let simmer for about 15 minutes, until the potatoes are soft.
After this time add the broccoli and simmer for another 5 minutes, just until the broccoli is tender.
Add the cheddar cheese and stir until it has fully melted, this takes a few minutes.
