Pina Colada Popsicles
These Pina Colada Popsicles are made with just 3 simple ingredients: pineapple juice, crushed pineapple and coconut milk.

398 mL can crushed pineapple

400 mL can coconut milk
1/2

shredded sweetened coconut

Instructions
First mix the coconut milk really well as it separates in the can. I like to use a hand blender to do this part, it makes it nice and creamy.
Then combine the pineapple juice, crushed pineapple and coconut milk (and shredded coconut if you're using it).
Pour the mixture evenly into dixie cups or popsicle molds (about 8).
After about 1 hour, insert popsicle sticks into the centre of the cups.
Return to the freezer and let freeze for at least 6 hours, overnight is best.
