Mom's Oatmeal Pancakes
These soft and delicious Oatmeal Pancakes are a family favourite breakfast recipe! They're hearty, healthy and so good!

Ingredients

milk

oats
(quick oats)

large
eggs
1/3
cup
vegetable oil
(or canola oil)

all purpose flour
1/4
cup
oat bran or wheat germ
2 1/2
tsp
baking powder
1/2
tsp
salt
2
tbsp
granulated sugar
Instructions
Combine the milk and oats, then let sit for 5 minutes.
In a separate large bowl mix together the egg and oil (I like to use a hand blender to do this).
After the oats have soaked for at least 5 minutes, stir in the egg/oil mixture.
In a separate bowl, mix together the flour, oat bran, baking powder, salt and sugar.
Then add the wet ingredients to the dry ingredients, and blend until just combined.
Scoop about 1/4 cup pancake batter for each pancake, then pour onto a preheated griddle or skillet over medium heat.
Cook about 2-3 minutes on one side, until you see the bubbles popping and they're golden brown on the bottom, then flip.
