Instructions
After the steaks have been marinated, and you're ready to grill, preheat your barbecue to high heat.
Brush the grill with a little bit of oil, then add the steak, sear it on both sides, then turn down the heat to medium, and cook each side about 3-4 minutes, so roughly 8-10 minutes total. We like ours slightly pink inside, so if you prefer yours more well done, just cook it a little longer.
Flank steak is best cooked to an internal temperature of 125-130 degrees F for medium-rare steak, or 135-145 degrees F for medium. Try not to overcook the steak as it can become quite tough if it's cooked past medium.
Note: marinated flank steaks will flare the first time you set them on the grill, so be prepared for that. This does leave a nice char!
Once the steak is done remove it from the barbecue, cover with aluminum foil and let the steak rest or about 5 minutes before you slice and serve it.
Place the steak on to a cutting board with a layer of sheets of paper towels under the board to catch any juices.
When slicing flank steak, the best way is to make sure to cut against the grain of the meat.
