Honey Roasted Carrots and Parsnips

Ingredients

large carrots

large parsnips

olive oil

honey
1/8

fresh ground black pepper
Instructions
Preheat your oven to 350 degrees F.
Peel, then slice the carrots and parsnips into strips, no wider than 1/2 inch.
Add to a baking dish and drizzle with about 3 tbsp olive oil. Mix well, so the carrots and parsnips are coated.
Drizzle on the honey, mix well again. You want the carrots and parsnips coated in honey.
Season with salt and pepper.
Bake for 45 minutes. The carrots and parsnips should be soft. Sometimes I roast them even longer (an hour) so they're nice and soft.
Serve immediately.
