These Gingerbread Pancakes are soft, fluffy and SO flavourful! With festive gingerbread flavour, these are perfect for holiday brunch!

Ingredients

flour

baking powder

baking soda

ground ginger

cinnamon

cloves

nutmeg

eggs

buttermilk
1/3
cup
molasses

tbsp
melted butter
1/4
cup
brown sugar
1/4
tsp
vanilla
Instructions
In a bowl whisk together the flour, baking powder, baking soda, ginger, cinnamon, cloves, nutmeg and salt.
In a separate bowl whisk together the eggs, buttermilk, molasses, melted butter, brown sugar, and vanilla.
Add the wet ingredients to the dry ingredients and stir until just combined.
Cook on a medium-high heat griddle, about 2-3 minutes each side, or until you see the bubbles popping in the pancakes.
Sprinkle with icing sugar, a bit of brown sugar and drizzle with syrup.
