Place all of the ingredients, except the raisins and fruit, into the bread machine in the order listed above.1 cup milk (2% or whole), 1 large egg, beaten, 2 tbsp soft butter, 3/4 tsp salt, 3 cups all purpose flour, 3 tbsp granulated sugar, 3/4 tsp ground ginger, 3/4 tsp ground cinnamon, 1/2 tsp ground cloves, 2 1/2 tsp bread machine yeast
Making Dough, then Baking in your Oven:
If you wish to bake the bread in your oven, choose the 'Dough' setting.
If your machine has a 'Fruit and Nut' addition signal, add the dried fruit at that time (it's usually after the first knead).2/3 cup dried cranberries, 1/3 cup raisins, 1/3 cup chopped dried apricots
If your machine does not have a 'Fruit and Nut' addition signal, you can knead these into the dough once the bread has completed it's cycle.
Shape the dough into a circle loaf (or shape of your choice).
Prepare a baking sheet by lightly greasing it with butter or oil (or lining it with parchment paper), then place the shaped dough onto the pan.
Cover the dough with a damp tea towel then let the dough rise in a warm space for 1 hour.
After this time preheat the oven to 350 degrees F. Remove the tea towel.
I like to dust the top of the loaf with a little flour, then score the top. It's just a nice touch, you don't have to do this though.
