This Easy Chicken Stroganoff is a classic comfort meal that's ready in about 1 hour. Made with tender chicken in a creamy, sour cream based sauce. Serve over egg noodles.
In a large skillet over medium heat, heat the olive oil then add the boneless skinless chicken thighs. Season generously with salt and ground black pepper.2 tbsp olive oil, 6 boneless skinless chicken thighs, 1/2 tsp salt, 1/4 tsp ground black pepper
Cook the chicken thighs for about 4 minutes on each side. After this time transfer the chicken to a plate (it's ok if they're a little pink because they'll continue cooking in the sauce).
Using the same pan, melt the butter, then add the onions and mushrooms and cook until golden and any liquid has disappeared. This takes about 10 - 15 minutes.4 tbsp butter, 1 medium onion, 2 cups sliced mushrooms
Then stir in the flour and cook for about 1 minute.3 tbsp all purpose flour
Add the consommé, broth and ketchup, stir then simmer until the sauce thickens.1 284 mL can consommé , 1 cup beef or chicken broth, 2 tbsp ketchup
Add the sour cream and mix well. Let simmer for about 3 minutes.1 cup sour cream
Add the chicken thighs to the sauce and simmer for about 10 minutes more, until the sauce has thickened and the chicken is no longer pink.
While the chicken is simmering cook the egg noodles according to the package directions.
Place the cooked egg noodles into a serving dish, then pour the chicken and sauce over noodles.
