This Creamy Cucumber Salad is creamy, light, fresh, tangy, dill-y and delicious! It makes a perfect side dish with grilled or roasted meats. Ready in 15 minutes.
Make the dressing first. Whisk together the sour cream, mayonnaise, vinegar, sugar, salt, pepper and fresh dill. I like to use a hand blender to do this part as it makes the dressing nice and creamy.
Now slice the cucumbers thinly (see pictures), about 1/8 inch thick.
Slice the shallots/red onion thinly.
Chop more dill, about 1 extra tablespoon.
Putting the salad together:
In a medium bowl toss the dressing with the sliced cucumbers, onion and additional fresh dill.
