Chewy Peanut Butter Cookie Bars Recipe
These Chewy Peanut Butter Cookie Bars are sweet, soft, chewy and SO peanut buttery! Bake the batch in one pan, so you get 36 bars all at once. No waiting for batches of cookies to bake when you make these bars!

Ingredients

butter
at room temperature

cup
creamy peanut butter
1/2
cup
granulated sugar
1/2

packed light brown sugar

large egg
1
tsp
vanilla extract

all purpose flour

quick cooking oats

baking soda

peanut butter chips
Instructions
Preheat your oven to 350 degrees F.
Line a 9 x 9 square baking pan with parchment paper. Set aside.
Using a stand mixer with the paddle attachment, cream together the butter, peanut butter, and sugars until light and fluffy.
Beat in the egg and vanilla.
In a separate large bowl whisk together the flour, oats, baking soda and salt.
Add the dry ingredients to the butter mixture and combine.
Stir in the peanut butter chips.
Spread the cookie dough into the baking pan, making sure it is smooth and level.
Bake for 30 - 35 minutes, or until the centre looks set and the edges are golden brown. See notes.
Cool on a wire rack before cutting.
Notes
I wanted our bars to be slightly chewy, so they are a little under done. I baked mine for 30 minutes.
