Ingredients
Base Cookie:
2
large bananas
mashed (about 1 1/2 cups)
1 1/2
cups
oats
quick oats or rolled oats
Optional Additions: (see tips for more ideas)
use about 1/2 cup total of add-ins
1/2
cup
chocolate chips
1
tbsp
ground flax
1
tbsp
chia seeds
Instructions
Preheat the oven to 350 degrees F.
Mash the bananas.
In a large mixing bowl add the oats, then stir in the mashed banana.
Add any additional ingredients you would like (see notes).
Mix well.
Line a baking sheet with parchment paper.
Drop the cookie dough by the spoonful on to the baking sheet. You can fit 12 to a sheet as these cookies don't spread out.
Gently press the batter down.
Bake for 13 - 15 minutes, the bottom edges should be lightly golden brown.
Let cool on a wire rack then enjoy!
Notes
Optional Ingredient Ideas:
1/3 - 1/2 cup chocolate chips or
1/2 cup chopped nuts (like pecans, walnuts, almonds)
1/4 cup peanut butter or almond butter
1/4 cup shredded coconut
1 tbsp ground flax
1 tbsp chia seeds
1/4 tsp cinnamon
