Peanut Butter Parfaits in Jars
These easy, no-bake peanut butter parfaits are a simple and delicious dessert! Put them in jars for individual servings.

Ingredients
1/2
cup
whipping cream
heavy cream
2
tsp
icing sugar
confectioner's sugar
1/3
cup
peanut butter
smooth
2
cups
of really good chocolate ice cream
buy the good stuff
chopped peanuts
or crushed peanut brittle for the topping

250 mL jars or small bowls
Instructions
Use a stand electri mixer to whip the heavy cream and icing sugar together until stiff peaks form. Transfer to a separate bowl.
Using the mixer whip the peanut butter until smooth.
Fold the whipped cream into the peanut butter, and stir by hand until combined.
Use 6 - 250 mL mason jars, and put a good sized scoop of chocolate ice cream in the bottom of each jar.
On top of the chocolate ice cream, evenly distribute the peanut butter mixture between the 6 jars.
Garnish with the chopped peanuts and/or crushed peanut brittle.
Freeze until you are ready to eat them.
