Moist and Delicious Pineapple Cake
This Moist and Delicious Pineapple Cake is amazing! Rich and full of pineapple flavour. Serve it for dessert with a scoop of vanilla ice cream or whipped cream. So good.

Ingredients
Pineapple Cake:

cup
butter

cup
white sugar

large eggs

vanilla extract

14 oz can crushed pineapple (drained well, set juice aside)

all purpose flour

baking soda

tsp
salt
Pineapple Sugar Glaze:
2
tbsp
powdered sugar
4
tbsp
pineapple juice
Instructions
Preheat your oven to 350 degrees F.
Line a loaf pan with parchment paper, then set aside.
Using an electric mixer, cream together the butter and sugar.
Add the eggs, one at a time, until the mixture is smooth.
Add the vanilla, mix well.
Add the drained crushed pineapple and mix well.
In a separate bowl whisk together the flour, baking soda and salt.
Add the flour mix to the pineapple mix, and combine.
Pour the cake batter into a prepared loaf pan.
Bake for 1 hour. The cake will be be golden in colour and if you insert a toothpick into the centre of the cake, it should come out clean.
While the cake is baking, you can make the glaze.
Combine the pineapple juice and powdered sugar. If you want it more thick, add more powdered sugar.
Once the cake has completed baking, remove it from the oven then drizzle it with the glaze (see recipe tips).
Let the cake cool for about 15 minutes, then remove it from the pan and place it on a wire cooling rack to cool completely.
Allow the cake to cool for at least 1 hour before serving.
