These Mini Apple Pie Dutch Baby Pancakes are a fun and delicious take on a classic Dutch Baby Pancake. Made into individual portions and served with a heaping scoop of homemade apple pie filling, these are brunch perfection.

3large applesMacIntosh are our favourite, peeled and chopped into 1/2 inch pieces
1/2cupbrown sugar
1tbspcinnamon
splash of spiced rumoptional
Instructions
Preheat your oven to 425 degrees F.
Apple Pie Filling:
Make the apple mixture first.
In a small skillet, melt the butter.
Stir in the chopped apples, brown sugar and cinnamon.
Cook until the apples are soft and the sugar mixture is like syrup.
If you're using the spiced rum, add a dash or two to the mixture now, and stir.
Set aside.
Mini Dutch Baby Pancakes:
Using a blender, mix together the milk, flour, vanilla and eggs until smooth.
Spray the muffin tins with oil (or Pam). This recipe makes about 18 pancakes, so you will need to spray 18 cups.
Melt the 6 tbsp of butter and evenly distribute it between the 18 muffin cups.
Pour batter evenly between the muffin cups.
Then place the muffin tins into the oven and bake for about 15 minutes. You can bake them in 2 batches if you wish.
The pancakes are done when they are golden brown and puffed up.
Once the pancakes are done, remove them from the oven, and add a heaping spoonful of the apple pie mixture to the middle of each pancake, and serve immediately!
Dust with some icing sugar, and serve with syrup or cinnamon sugar and any extra apple pie mixture.
