Fresh Tomato Salad with Basil Balsamic Vinaigrette
This Fresh Tomato Salad with Basil Balsamic Vinaigrette can be made in 15 minutes, and is the perfect summer side dish. Summer ripened tomatoes paired with fresh basil, it just doesn't get more delicious than this.

Ingredients
- 10 - 12 medium vine ripened tomatoes
Basil Balsamic Vinaigrette
- 1/4 cup extra virgin olive oil
- 1/4 cup white balsamic vinegar
- 2 tsp granulated sugar
- leaves ~ 10 fresh basil more if you like!
- salt
- fresh ground black pepper
Instructions
- Cut the tomatoes into quarters and add them to a salad dish.
- In a separate bowl combine the olive oil, vinegar and sugar and mix. I like to use a hand blender to do this.
- Add the fresh basil leaves and blend again.
- Pour the dressing over the tomatoes, and lightly stir the salad.
- Add more chopped fresh basil if you like!
- Season with salt and fresh ground pepper.
- Enjoy right away!
Notes
Make sure to serve this salad right away! If it sits too long the tomatoes will release their juices which will dilute the dressing.
