Instructions
Pick about 50 of the most perfect chips from the bag (no cracks or breaks). Set aside.
If you need to crush the candy canes, place them in a ziplock bag and crush them with a mallet or the bottom of a glass, until they're the size you want.
Now it's time to melt the chocolate.
To melt the chocolate chips I like to use the double boiler method. To do this I create a double boiler by putting a heatproof bowl over a saucepan of gently simmering water (making sure that the bowl and pan fit together snugly). This ensures that the chocolate doesn’t burn. Add the chocolate chips to the heatproof bowl and melt them, stirring often. This should only take a few minutes.
Putting it all together:
Take a chip and dip the bottom half into the melted chocolate. You can use a spoon to help smooth the chocolate over the chip, and remove any excess chocolate.
