Instructions
Make the hoisin sauce mixture first:
In a small saucepan combine the hoisin sauce, rice vinegar, soy sauce, honey, sriracha, sesame oil, and lime juice. Over low heat stir and cook until well blended, then remove from the heat and set aside.3/4 cup Hoisin sauce, 2 tbsp rice vinegar, 2 tbsp soy sauce, 1 tbsp liquid honey, 1 tbsp sriracha, 1 tsp sesame oil, 1 tbsp fresh lime juice
Cooking the turkey:
In a large skillet over low-medium heat, warm up about 1 tbsp of oil then add the ground turkey, minced garlic and ginger.1 tbsp oil, 1 1/2 lbs lean ground turkey (or chicken), 1 clove garlic, 1 tbsp minced fresh ginger
Cook until the meat is no longer pink and the moisture is gone (you may have to drain it).
Add the chopped bell pepper, onion, and the sauce you made, to the ground turkey mixture. Stir and cook for about 3-4 minutes, or until the vegetables are cooked but still kind of crunchy.1 bell pepper, 1 small onion
Sriracha Mayo Sauce:
In a small bowl mix together the kewpie mayo and sriracha sauce.2 tbsp kewpie mayo, 2 tbsp sriracha
Putting it all together:
In separate bowls set out the lettuce leaves, cooked ground turkey mixture, chopped peanuts, chopped cilantro, sliced onions, sriracha/mayo sauce and any other toppings you would like.1 head lettuce (iceberg, romaine, butter), handful fresh cilantro, 3 green onions, 1/2 cup chopped peanuts
Let everyone put together their own wrap: start with a lettuce cup, add a generous spoonful or two of the turkey mixture, sprinkle with cilantro, green onion, and peanuts, then drizzle with the sriracha/mayo mix.
