Easy Caprese Salad
This Easy Caprese Salad is fresh, easy to make, and is bursting with delicious flavour! Best made with garden fresh tomatoes and basil.

Ingredients
6
vine ripened tomatoes
or 2 cups of grape tomatoes
Bocconcini cheese
we use one of the large balls
large handfuls of fresh basil leaves
1 to 2
tablespoons
balsamic vinegar or a balsamic vinegar reduction
1 to 2
tablespoons
extra virgin olive oil
salt and fresh ground black pepper
Instructions
Slice tomatoes and bocconcini cheese. Or we like to tear up the cheese instead - it's a really nice texture when you eat it like this.
On a serving platter, layer slices of tomatoes, bocconcini cheese and basil leaves.
Drizzle with olive oil and balsamic vinegar, or a balsamic vinegar reduction.
Salt and pepper to taste.
