15 ounce can chopped jalapeño peppers, drained (see tips)
1/2cupchopped green onion
1/2cupchopped fresh cilantro
1/4cupchopped red bell pepper
2cupsshredded sharp cheddar cheese
juice from 1 lime
Dressing:
3/4cupmayonnaise
3/4cupsour cream
3/4tspblack pepper
1/4tspseasoning salt
1/2tspgarlic powder
Dippers:
bags of corn chips or tortilla chips
Instructions
In a large bowl mix together the corn, chilies, jalapeño peppers, green onion, cilantro, red pepper, shredded cheese and juice from 1 lime.
In a separate small bowl whisk together the ingredients for the dressing: mayo, sour cream, pepper, seasoning salt and garlic powder. I like to use a small hand blender to mix everything together.
Then add the dressing to the corn ingredients and mix well.
Let the corn dip sit for about 30 minutes before serving.
