1tspcinnamon
3cupsquick oats
1/2cupbrown sugar
2tspbaking powder
1/4tspsalt
Instructions
Mash the bananas, until fairly smooth (no big chunks). Set aside.2 ripe bananas
In a bowl whisk together the eggs, oil, milk, vanilla and cinnamon, until smooth. I like to use my hand blender to do this.3 eggs, 1 1/2 cups milk, 1/4 cup oil, 1 tsp vanilla extract, 1 tsp cinnamon
Stir in the mashed bananas.
In a separate bowl, whisk together the dry ingredients: oats, sugar, baking powder, and salt.3 cups quick oats, 1/2 cup brown sugar, 2 tsp baking powder, 1/4 tsp salt
Combine the egg mixture and the oat mixture.
Prepare an 8 X 8 square baking dish by giving the inside a light spray with a cooking spray. Then pour the mixture into the dish.
At this point you can do 1 of 2 things: cover and refrigerate overnight then bake in the morning, or let it rest for 15 minutes and bake right away.
In the morning put the dish, uncovered, into a cold oven and bake at 350 degrees F for 40 – 45 minutes. If you are baking it the same day you make it, bake it at 350 degrees F for 40 minutes. The oatmeal should be lightly golden brown when done.
