Simple Roast Chicken Recipe

This classic Simple Roast Chicken Recipe is no-fuss, quick and delicious. The chicken is juicy, flavourful and so good.

Ingredients

  • 1 (4 – 5 lb) whole chicken
  • 3 tbsp olive oil
  • 1 tsp dried rosemary
  • 1/4 tsp dried sage
  • 1 tsp dried thyme
  • 1 tsp seasoning salt
  • 1/8 tsp ground black pepper

Instructions

  1. Preheat your oven to 350 degrees F.
  2. Place the whole chicken into an oven proof dish with sides. I like to use an enamel dish but you can use a roasting pan of your choice.
  3. Drizzle about 3 tablespoons of olive oil over the chicken and use a basting brush to help spread the oil over all the chicken.
  4. Sprinkle on the herbs.
  5. Season with the salt and pepper.
  6. Add a splash of water to the bottom of the pan, then place in the oven.
  7. Roast for approximately 2 – 2 1/2 hours (or longer depending on the size of the chicken). The chicken is done when the internal temperature reaches 165 degrees F (place an instant read thermometer into the thickest part of the thigh and thickest part of the breast). And the chicken should be golden brown in colour.
  8. If any of the chicken darkens too quickly before it’s done roasting, tent it with some aluminum foil.
  9. Let the chicken rest for about 5 minutes, then carve and serve! Tip: I like to place a cutting board over a bed of paper towels to capture any juices that escape during carving.
