Mom’s Oatmeal Pancakes

These Oatmeal Pancakes are a family favourite recipe!  They’re hearty, healthy and so delicious!

Ingredients

  • 2 cups milk
  • 1 1/2 cups oats
  • 2 eggs
  • 1/3 cup oil
  • 1 cup flour
  • 1/4 cup wheat germ or oat bran
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp sugar

Instructions

  1. Combine the milk and oats, then let them sit for 5 minutes.
  2. In a separate bowl mix together the egg and oil.
  3. After the oats have soaked for at least 5 minutes, add the egg/oil mixture.
  4. In a separate bowl, mix together the flour, wheat germ, baking powder, salt and sugar.
  5. Then add the wet mix to the dry mix, and stir until just combined.
  6. Cook on a med-high heat griddle.
